Beriti is a small mill eight hours south of Addis Ababa not far from Lake Abaya. It is a traditional Ethiopian mill where hundreds of producers deliver their coffee cherry throughout the harvest. The producers typically grow the coffee in their gardens where it ripens alongside the family’s fruit and vegetable. This model of numerous producers contributing to create a large lot of coffee is one of Ethiopia’s strengths. Much of the coffee grown are from wild seeds that have naturally developed disease resistance and unique flavours over thousands of years.

The natural processing of this coffee is one of the oldest methods of coffee production; simply laying the coffee out and allowing it to dry. Coffee does not continue to ripen after being picked but during the slow drying of the coffee seed the fruit sugars and flavours move from the fruit to the seed which creates the unique flavours of the coffee.
