Legendary coffee producer Mauricio Shattah has pushed the world of coffee forward with this lot, the first Darkroom Natural. Dried in a temperature and humidity controlled room, Mauricio has created a drying profile, a true first in coffee. Coffee drying is usually done based on the weather, but controlling the environment means we can now optimise one of the most important parts of making a coffee to create an even more intense, interesting, and delicious cup.
Mauricio is responsible for creating the coffee used to win coffee competitions all around the world, including the UK Barista Championships in 2018 and 2020. A medical doctor by training, Mauricio turned to coffee producing and after applying his scientific mind he quickly became an industry leader. First gaining fame from his Geshas, he is now releasing some of the best coffees in the world using a myriad of different cultivars. This maragogype is among his new lots and we are incredibly excited that, through his skill and deep knowledge of coffee, he’s made the best coffee we’ve tasted this year.
Organic House Blend was created by blending two organic coffees from Latin America: the Colombian Los Vascos and the Nicaraguan San Juan. Carefully roasted to highlight the coffees’ vibrant and natural flavours, House Blend is a crowd pleasing combination of sweeetness and balance.
Organic Classic Blend was created by blending two coffees from Latin America: the Brazillian Dutra and the Colombian Belen. Combining the intense nut-and-chocolate flavours of the former with the smooth sweetness of the latter, this is a big, bold roast which you won’t soon forget.
Organic Decaf is an easy-to-drink, classic coffee. Decaffeinated using the all-natural sparkling water method, it's made from lots grown in the forests of the West Nile. The coffee cherries here ripen slowly, creating a naturally sweet, complex cup which is incredibly smooth and balanced.
