The “wine process” is inspired by techniques from the wine world and is utterly unique. The coffee cherries are fermented in sealed bags with no new oxygen allowed in and stored at a hot temperature to facilitate fermentation. After five days, the coffee is taken to be dried on the raised beds for 2-3 hours until the color of the cherry turns a bright red. This happens again and again over the next 30 days before it is finally dried. The process creates an intense and vibrant cup that tastes like nothing else around.
This is our second lot from the world’s fourth biggest coffee producing country, and the first made from a unique processing method we haven’t seen anywhere else in the world, resulting in pure funky weirdness in the cup. Producer Win Jamal took the lead at the cooperative to create this lot after years of experimenting with their processes. What makes Indonesia unique is that it has its own specialty cafe and roasting scene which means some of the most innovative and best lots stay in the country. We feel very fortunate that we get to share this innovative approach to one of the world’s great origins.
Organic House Blend was created by blending two organic coffees from Latin America: the Colombian Los Vascos and the Nicaraguan San Juan. Carefully roasted to highlight the coffees’ vibrant and natural flavours, House Blend is a crowd pleasing combination of sweeetness and balance.
Organic Classic Blend was created by blending two coffees from Latin America: the Brazillian Dutra and the Colombian Belen. Combining the intense nut-and-chocolate flavours of the former with the smooth sweetness of the latter, this is a big, bold roast which you won’t soon forget.
Organic Decaf is an easy-to-drink, classic coffee. Decaffeinated using the all-natural sparkling water method, it's made from lots grown in the forests of the West Nile. The coffee cherries here ripen slowly, creating a naturally sweet, complex cup which is incredibly smooth and balanced.
