This release comes entirely from La Prosperidad de Chirinos, a cooperative of more than 800 smallholders farming the hills around San Ignacio in northern Peru. The cooperative holds Fairtrade, organic, Rainforest Alliance and Smithsonian Bird Friendly certification, and invests in agronomic training, micro-financing and leadership programmes for women and young farmers. Member farmers cultivate a mix of Caturra, Catuaí, Catimor and Lempira varieties on plots that average little more than a few hectares each. Since 2000 more than 50,000 native shade trees have gone in across the farm. The result: Aquiares now captures over four times the carbon it emits each year, (certified to ISO 14064 by INTECO under Costa Rica's NAMA Café programme and verified on the ground by a research station run jointly with CIRAD and CATIE). The wildlife has answered in kind. The processing is anything but. In 2025 Merlith and Simon built a dedicated processing lab on the farm, fitted with stainless steel production tanks, bioreactor barrels and microscopes, and this Geisha is one of the first lots to come through it. Their harvest is processed by Ture Waji of Sookoo Coffee at the Dambi Uddo drying station, a producer who has done as much as anyone to put Guji naturals on the map. Only ripe cherries make the cut, hand sorted and dried whole on raised beds for 18 to 21 days.
