For our Christmas Blend this year, we’re excited to spotlight one of our favourite coffee processes: the honey process.
Honey processed coffees are often considered to be a good middle ground between the washed and natural processes, as they offer the sweetness and complexity of a natural processed coffee with the cleanliness and clarity of a washed processed coffee. This makes a perfect comforting blend for the colder winter months.
We have also chosen to match varietals, with two Red Bourbon coffees combining to create a harmonious and well-balanced blend. Expect your coffee to have festive notes of red apple, citrus, and creamy sweet milk chocolate.

The Ventura family is a multi-generational coffee farming family in Guatemala. The family has been growing coffee since 1894, when their grandfather started growing coffee at a farm called Finca Rabanales. In 2012, the family purchased Finca El Durazno, planting their first crop there the following year.
The Ventura family is committed to producing high quality coffee, even as climate change has an impact on their crops. They work with Coffee Bird, a family-owned, female-led importer that specialises in ethically-sourced Guatemalan coffee. Coffee Bird pays farmers 37% higher than the industry average in Guatemala, and is proudly transparent on their impact in the speciality coffee market.
Buki owner Jean Paul manages a farm with approximately 6,000 trees, and he not only processes the coffee from his own land, but also from several hundred small-scale local farmers in the surrounding community. The exceptional quality of his coffee is a testament to his unwavering commitment and determination to train and educate these farmers, as well as to his meticulous attention to detail during the hand-sorting process at the washing station.
We don’t label our coffee as espresso or filter. Instead, for each coffee we create a unique roasting profile, designed to bring out the best flavours from its origin, farm and milling method. That’s why, instead, we label our coffee based on the experience it brings to the cup.
