Our newest decaf coffee comes from our newest coffee region and Asia’s youngest country, East Timor. The lot started in 18 farms near the village of Duhoho. The coffee was then brought together to be processed by Senhor Miguel Babo Soares and his team. Senhor floats the cherries in water to get rid of the low density coffee, the denser coffee the sweeter it is. Senhor then takes it to be fermented for 36 hours before drying it in the sun for weeks. The coffee then heads to the capital of Dili before being sent to Germany for its zero waste all natural decaffeination.
The coffee gets decaffeinated by the green beans being put in warm water. The water is then filled with C02 like that found in soda. From there the C02 binds with caffeine molecules. The water is removed and along with it the C02 and caffeine and the coffee gets dried. The caffeine gets used in soda and the water gest filtered to be used again. What gets cleaned from the filter is turned into feed for cows. This unique process means the coffee keeps its unique flavour while being still completely natural.
