Innovative Rare & Acclaimed Duo
A combination of two Rare & Acclaimed coffees from innovative Colombian producer Felipe Arcila, showcasing the different ways in which Felipe has utilised the Sidra coffee varietal on his Jardines Del Eden farm.
The first coffee, EF2, has undergone an experimental extended fermentation process, in which the coffee is dry-fermented for 24 hours, sealed inside temperature-controlled GrainPro bags for 50 hours, then placed on raised beds until an 11% moisture content is achieved.
The result of this meticulous process is a tropical and slightly funky flavour profile, with notes of papaya, apricot and orange.
The second coffee, Carbonic Maceration, is just as experimental – and just as delicious. In this method, coffee cherries are fermented whole in an airtight container filled with carbon dioxide gas. This anaerobic environment facilitates fermentation and prevents bacteria, allowing flavours to be slowly extracted over a 24-48 hour period.
The result is an extremely sweet and complex coffee which is reminiscent of raspberry jam, with subtle tropical fruit notes balanced out by citrus acidity.
