Another delicious lot from our direct trade partner Nancy Hernandez. Expect a bright, citrus-driven flavour profile with a sweet, sugary finish. A shining example of the notoriously difficult Honey process.
The Honey method is somewhere in between Washed and Natural coffees. The pulp (skin) and fruit are removed from the coffee cherry, leaving a thin layer of sticky mucilage. In a Washed process coffee, this mucilage would be cleaned off completely before drying, but in Honey processing, some amount of it is left on. This gives the coffees a distinctively sweet character.
The Catuai cultivar is a cross between Mundo Novo and Yellow Caturra. It originated in Brazil as far back as the 1940s, and eventually made its way to Central America via Guatemala in the 1970s. Catuai is known for producing a very sweet and balanced coffee.
We don’t label our coffee as espresso or filter. Instead, for each coffee we create a unique roasting profile, designed to bring out the best flavours from its origin, farm and milling method. That’s why, instead, we label our coffee based on the experience it brings to the cup.
