Sending Off Summer with the Gardenias Berry Cooler

Gardenias is our bright, fruity Guatemalan natural, all strawberry, raspberry and red grape, and it comes alive over ice. Summer may be over on the calendar, but we are not letting it slip away without a proper send-off. So here is our favourite way to see the season out: the Berry Cooler, a jug built for the table. First, the flash brew it is built on.occasion, none of the hangover, and a clear head to enjoy the rest of the day. Better still, every one starts with a can of our Organic Cold Brew, so they take about ten minutes and are yours to make as often as you like.

Bring them out to spice up a quiet evening at home, or line them all up for your next summer party.

Start here: the flash brew

The Berry Cooler is built on a flash-brewed iced filter, so get this right first.

Iced filter (flash brew)

You'll need: 15g Gardenias (coarse ground), 150g hot water, 100g ice.

  1. Add 100g of ice to your carafe or server.
  2. Brew a V60 as normal, 15g coffee to 150g hot water, straight over the grounds so it drips onto the ice.
  3. Swirl until the ice melts, then serve over fresh ice.

Pro tip: it doubles easily, just keep the same ratio (30g coffee, 300g water, 200g ice).

The Gardenias Berry Cooler

Our summer send-off in a jug, and the one to make for friends. Serves about four.

You'll need: 500ml flash-brewed Gardenias filter (chilled), a handful of fresh strawberries and raspberries plus a few to serve, a little honey or sugar (optional), a squeeze of lemon, plenty of ice.

  1. Lightly crush the berries with the honey or sugar to make a quick syrup, then strain through a mesh sieve.
  2. In a jug, combine the chilled Gardenias filter, the berry syrup, a squeeze of lemon and plenty of ice.
  3. Stir, pour over fresh ice, and finish with a few whole berries.

Pro tip: make the coffee and the syrup ahead, then build the jug when everyone arrives.
