All of our coffees are tested weekly by our professional tasters to ensure quality and delicious flavour. They’re our Quality Control team, and they taste, evaluate, and refine every single one of our coffees, every single day.

Our coffee is roasted and packaged in state-of-the-art nitrogen gas-flushed bags, to help keep it at peak quality for over a month. Your coffee order will come from the freshest possible roast, and will always have weeks’ worth of peak freshness left in it.

We dispatch Monday to Friday from our roastery. You will receive the most recent roast.

The first Mokka harvest from Jardines del Encanto, exclusively for Kiss the Hippo. Grown above 2,000 metres in Quindío by Felipe Arcila, this exceptionally rare coffee comes from one of Colombia's most experimental farms. Mokka is an old Yemeni cultivar prized for its tiny pearl-like beans, remarkably low yields and extraordinary cup quality. Processed using a 48 Hour Slow Natural fermentation, it reveals remarkable complexity and depth. Expect notes of raspberry, cacao and cinnamon, with vibrant fruit, rich sweetness and a buttery body. Available for a limited time on the brew bars in our Bloomsbury, Fitzrovia and City cafés, with a limited release of just 100 packs.

Water: 225g
Coffee: 15g

Grind
Medium-coarse (around 700 microns)

Bloom
94°C water. Pour 50g, then wait 30 seconds

Brew
0:30 – Pour to 100g
1:00 – Pour slowly to 225g

Drain
Finish between 1:55 and 2:25

Method
90°C water. Pour 180gin one steady stream.

Brew
At 1:15 stir gently, cap and flip. Press slowly over 30 seconds, finishing at 2:00.

Common Questions

Mokka is an old Yemeni coffee cultivar named after the historic port of Mocha. It is prized for its tiny, pearl-like beans and its exceptional cup quality, and it is one of the rarest varieties grown commercially anywhere in the world.

Mokka trees yield only a fraction of a typical Arabica, which makes the variety difficult and expensive to grow. Very few producers cultivate it outside Yemen, so a Colombian Mokka like this one from Jardines del Encanto is rarer still. Only 100 packs were produced for this release.

Expect macerated raspberry, blood orange and lime zest over deep cacao and warm cinnamon, with a winey acidity and a rich, buttery body. Think of a Gesha with the volume turned up.

It shines as a filter pour-over for clarity and vibrant fruit, or through an AeroPress for a richer, sweeter cup. See the brew recipes above for measurements, grind and timings.

Your coffee is roasted to order and packaged in nitrogen-flushed bags to hold peak quality for over a month. Store it somewhere cool and dry, away from light, and grind just before brewing for the best flavour.
