Assemble your brewing equipment by placing a cone filter inside the Kalita on top of your brewing vessel.
Rinse the filter with freshly boiled water (this step eliminates any paper residue and also heats the brewing equipment to minimise heat loss during brewing).
Don't forget to discard your rinse water!
Add 20g of freshly ground coffee to the filter and gently shake it to create a flat bed.
Tare your scale, start the timer and pour 50g of water just off boiling in a spiral pattern, wetting the whole bed of coffee and allow to “bloom” until 30 seconds as the CO2 escapes
After 30 seconds, pour additional 250g of water in a spiral pattern. Finish the pouring by 1 min 15s.
After 2.5 - 3 min, coffee should have finished dripping and you can discard the filter.
Swirl the brew to even out the particles.
