Nancy Hernández is a true force in the Honduran coffee world, having worked in nearly every part of the industry since she was young from picking cherries and cleaning milling equipment to managing cafes and green coffee export. A genuine specialty coffee success story.
After finishing her education, Nancy used her savings to buy three acres just outside her community of Trapiche, a prime coffee growing area. With the help of her sister and mother, she established Finca Jazmín. Under native shade trees, they planted traditional Bourbon and Catuai varietals, prioritising fruit quality over total yield.
Today, Finca Jazmín is an exemplary farm, known for producing small lots of exceptional washed coffee while adhering to meticulous sustainability standards. Nancy employs biodynamic farming practices, focusing on water conservation and soil regeneration.
The farm's crowning achievement is its Gesha offering. This coffee is classic Gesha at its best: extremely perfumed, fragrant, and floral, yet beautifully balanced with peach sweetness. It stands out as the best coffee we've ever tasted from Honduras.
We don’t label our coffee as espresso or filter. Instead, for each coffee we create a unique roasting profile, designed to bring out the best flavours from its origin, farm and milling method. That’s why, instead, we label our coffee based on the experience it brings to the cup.
