We're excited to introduce this new lot from Victorio Cruz, the producer behind our renowned Jurusalen anaerobic lot. The farm, named after Victorio’s grandson Isaac, symbolises the budding passion of a six-year-old who is already eager to follow in his grandfather’s footsteps as a coffee farmer.
This lot comes from a 40-year-old plot of Typica trees, the oldest known coffee variety, dating back to the 15th Century and also known as Jamaica Blue Mountain. While higher-yielding but lower-quality varietals have largely replaced Typica in Honduras, Victorio is dedicated to preserving this historic variety. Despite the small harvest, the quality is exceptional, and we secured the entire lot upon tasting it.
The Black Honey process imparts a rich, dark sugar-like sweetness to this coffee, while the Typica’s inherent berry and chocolate notes shine through. This coffee beautifully marries youthful aspirations with time-honoured tradition, resulting in a truly delicious cup.
We don’t label our coffee as espresso or filter. Instead, for each coffee we create a unique roasting profile, designed to bring out the best flavours from its origin, farm and milling method. That’s why, instead, we label our coffee based on the experience it brings to the cup.
